2 1⁄4cupsbutter, cubed
5tablespoonsvegetable oil

1cupheavy cream (whipping)
sugar, for rolling

DIRECTIONS
Preheat the oven to 325°F.
In a large mixing bowl, using a whisk beater, combine the sugar, salt, oil, and butter for one minute.
Then add the eggs, and beat until well combined.
Mix in the heavy cream and whisk for another minute.
Switch the beater to a dough hook then add the flour and baking powder to the batter. Beat for 2 minutes, or until the dough is combined and a firm consistency.
Cover and let the dough rest for 5 minutes.
Line baking sheets with parchment paper. Pinch off pieces of dough and roll it into a ball, then roll the ball in sugar. .
Place the balls on the baking sheets around 2” apart, then press the ball using a glass. At this point, you can press any shape onto the cookie using small cookie cutters, etc.
Bake cookies for approximately 20 minutes, or until lightly coloured.
