Combine 1/2 cup sugar and 2 tablespoons cinnamon in a small bowl and set aside.
Filling:
With a hand mixer, beat the 4 bricks of softened cream cheese until smooth.Add 1 cup sugar, 2 eggs, 2 teaspoons vanilla and beat until smooth and creamy. Set aside.
Assembly:
Spray a 9×13 pan with non-stick spray and sprinkle half of the cinnamon/sugar mix evenly in the bottom of the pan.
Unroll the dough and carefully place into the pan on top of the cinnamon/sugar mix.Squish or fold the edges of the dough to make it fit in the pan.
Spread the cream cheese mix evenly over the dough.
Unroll the second can of dough and place on top of the filling.
Sprinkle the remaining cinnamon/sugar mix on top of the dough and bake at 350 degrees for about 30 minutes or until light brown.
Let it cool before covering and placing in the fridge to fully set.
