Easy Blue Cheese Cole Slaw

  • 12 small head green cabbage
  • 12 small head red cabbage
  • 4largecarrots, peeled
  • 2cupsmayonnaise
  • 14 cupDijon mustard
  • 2tablespoonswhole grain mustard

  • 12 teaspoonkosher salt
  • 12 teaspoonblack pepper
  • 1 12 cups crumbled blue cheese
  • 1cup chopped fresh parsley

    DIRECTIONS

  • Cut the cabbages in half and then in quarters and cut out the cores.
  • Using a food processor or box grater, shred the cabbage.
  • Shred or thinly slice the carrots.
  • Transfer cabbage and carrots to a large mixing bowl.
  • In a medium bowl, whisk together the mayo, both mustards, vinegar, celery salt, salt and pepper.
  • Pour enough of the dressing over the grated vegetables to moisten well and toss.
  • Add crumbled blue cheese and parsley and mix together.
  • Cover slaw and chill several hours in the fridge before serving.
