Easy sugar-free breakfast cookies recipe uses just three ingredients

Breakfast biscuits are a popular snack sold in supermarkets but many contain hidden sugars that make them less nutritious than they may seem.

Luckily they’re easy to make from scratch with just a few simple ingredients, including oats.

When combined with healthy fats and protein, the common grain can be transformed into a flavoursome snack that satisfies sweet cravings.

Speaking exclusively to Express.co.uk, plant-based chef and nutrition coach Lisa Marley revealed her simple recipe for sugar-free breakfast cookies.

Made without eggs or milk, the biscuits are suitable for vegetarians and vegans.

  • 200g oats
  • 100g chopped walnuts
  • Two ripe bananas (approximately 200g)

When it comes to baking, a preheated oven is essential for the best results, and these cookies are no exception.

Preheat the oven to 180°C and line a baking sheet with parchment paper. Then, place the whole bananas into a large mixing bowl.

Mash the soft fruit to form a smooth paste before adding the oats and chopped nuts to the mixture.

Continue to stir until the ingredients are properly combined and leave it all to sit for five minutes.

Scoop about one tablespoon of the mixture and place it on the prepared baking sheet. Leave some space between each cookie as they will spread slightly during baking.

Lisa noted that this allows the oats to “absorb some moisture” which helps the cookies to hold their shape as they cook.

When time is up, scoop out one tablespoon of the mixture at a time and place it on the prepared baking sheet. Leave some space between each cookie as they will spread slightly during baking.

Gently flatten each cookie with the back of a spoon or fingertips to achieve the desired thickness, then place the tray in the hot oven for 12 minutes.

The edges should turn golden brown when done, at which point the cookies can be removed from the oven and left to cool on the baking sheet for a few minutes. After this, move them to a wire rack.

Lisa said: “Eating oats can provide several health benefits due to their nutritional composition. Oats are a good source of various essential nutrients, including dietary fibre, vitamins (such as thiamin and folate), minerals (such as magnesium and phosphorus), and antioxidants.

“They are also particularly rich in soluble fibre called beta-glucan, which has been linked to numerous health benefits, such as reduced LDL cholesterol levels, improved heart health, and a healthy digestive system.”
