This keto-friendly ice cream is creamy with the perfect amount of chocolate flavor—unlike other diet ice creams, there’s no chemical flavor whatsoever. Plus, it’s super easy to make. You’ll find full-fat canned coconut milk in the international aisle. Be sure not to freeze the ice cream for too long, or it’ll be difficult to scoop.
- 1(14-oz.) can full-fat, unsweetened coconut milk (well-shaken and stirred)
- 1 1/3 cups half-and-half
- 1/2 cup keto sweetener (such as Swerve)
- 3 tablespoons unsweetened cocoa
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
How to Make It
Process all ingredients in a blender until smooth, about 20 seconds.
Pour mixture into freezer container of an electric ice cream maker, and freeze according to manufacturer’s instructions until frozen and creamy, about 50 min. Serve immediately. Or for best results, freeze at least 30 minutes and up to 2 hours before serving.
