Pumpkins become the vegetable of the moment when Halloween strikes, but in the days that pass the seasonal vegetable soon finds itself heading for the bin. While you may simply consider throwing away your pumpkin once the festivities are over, there are some simple and delicious recipes that allow you to make the most of the vegetable.

One of the most popular of these is pumpkin soup, an autumnal tradition perfect for a starter or a warming lunch.

Though there are all manner of pumpkin soup recipe varieties out there, the classic dish doesn’t have to be difficult.

In fact, you can whip up a tasty bowl using just five ingredients.

How to make pumpkin soup using five ingredients

Ingredients

In order to make the pumpkin soup you will need:

One pumpkin (peeled and chopped into large chunks)

Onion

Garlic

Stock or broth and water

Milk or cream

Method

1 Be sure to begin by peeling your pumpkin and chopping it into large chunks.

2 Place the peeled pumpkin into a large pot along with chopped onion, and a clove of garlic.

3 Pour in your broth or stock and water, ensuring the liquid does not fully submerge all of the pumpkin.

4 Bring to a boil then uncover your pot. Reduce the heat and allow the mixture to simmer until the pumpkin is tender. This usually takes around 10 minutes, but you can check the texture of your pumpkin using a knife.

5 Remove from heat and use a stick blender to blend the ingredients until they are a smooth consistency.

6 Season to taste with salt and pepper.

7 Stir through your cream or milk. For a less creamy soup try adding a knob of butter rather than cream.

8 To serve, top with a drizzle of cream and a sprinkling of salt and pepper. You can also top it with a spring of parsley for presentation.

Pumpkin soup is not the only way you can use up your leftover pumpkin, however.

There are countless ways in which pumpkin can be used to make a delicious meal.
