If those fillings don’t fit your vibe, change them to whatever you want—this dish is infinitely customizable. And it’s all wrapped up in a bread that’s soft on the inside and crusty on the outside. Look for ready-made dough in the bakery section of your grocery store, as well as pizza restaurants. To stretch the dough into one long, vertical piece, get a little help from gravity: Just let it pull the dough down while you hold the other end, and keep switching.
Ingredients
- 2(1-lb.) fresh pizza dough balls
- 2 cups shredded cooked chicken
- 6 ounces cream cheese, softened
- 1/3 cup ranch dressing
- 1/3 cup hot sauce (such as Frank’s RedHot)
- 8 ounces Cheddar cheese, shredded (about 2 cups), divided
- 8 ounces ground Italian sausage
- 3/4 cup (about 4-oz.) chopped cremini mushrooms
- 1/3 cup diced yellow onion
- 1/3 cup diced yellow bell pepper
- 1/3 cup pizza sauce
- 2 ounces pepperoni, chopped
- 2 ounces sliced black olives
- 1/4 cup all-purpose flour, for dusting surface
- 8 ounces mozzarella cheese, shredded (about 2 cups)
- 2 tablespoons olive oil
- Ranch dressing
- 2fresh chives
- Doritos and celery sticks, for serving
How to Make It
Step 1
Remove dough from refrigerator, and let stand 1 hour.
Step 2
Stir together chicken, cream cheese, ranch, hot sauce, and 1 1/4 cups of the Cheddar in a medium bowl until combined. Set aside.
Step 3
Place sausage in a medium skillet over medium-high; cook, crumbling meat with the back of a wooden spoon until evenly browned and mostly cooked through. Add mushrooms, onion, and bell pepper; cook, stirring often, until vegetables are soft and sausage is fully cooked, about 7 minutes. Drain sausage mixture, and transfer to a second medium bowl. Stir in pizza sauce, pepperoni, and olives. Preheat oven to 425°F.
Step 4
Roll 1 pound of the dough on a floured surface; stretch into a 22-inch long narrow rectangle. Sprinkle remaining 3/4 cup Cheddar cheese along center of pizza dough. Place chicken filling evenly on top of Cheddar. Fold dough carefully over filling, and press lightly along seam to ensure filling is all inside and edges are sealed.
Step 5
Roll remaining 1 pound dough onto floured surface; stretch into a 22-inch long narrow rectangle. Sprinkle half of the mozzarella along center of dough, and top evenly with sausage filling. Sprinkle remaining mozzarella on top of filling, and fold dough carefully over filling, pressing along seam to ensure filling is all inside and edges are sealed.
Step 6
Place both filled pizza rolls beside each other on a baking sheet lined with parchment paper. Curve ends to meet together to form the shape of an oval football. Brush dough with olive oil. Cut a few slits in top of dough, and bake in preheated oven until golden and cooked through, 20 to 25 minutes.
Step 7
Transfer pizza football to a large cutting board for serving. Pour ranch dressing in a small bowl, and place in center of pizza roll football. Cut 1 chive into 1 (3-inch) piece; cut other into 3 (1-inch) pieces. Place chive pieces on top of ranch in a football lace design. Arrange Doritos along inside of pizza roll to create a chip bowl. Place celery along outside of pizza roll to represent the grass. Cut each roll into 12 pieces.
