Vanilla mug cake recipe makes the ‘quickest, most satisfying pudding for one’
Now that it’s the weekend, many people will be heading out to paint the town red.
However, if you fancy a cosy one instead and are keen on staying in, BBC Food has the perfect comfort treat for you.
So why not relax on the sofa, curl up with a movie and indulge in a super delicious yet quick and easy dessert?

The recipe serves just one person but those hosting this weekend can make additional ones for their guests.

If you’re after a selection of puddings, chocolate lovers can also tuck into this “melt in the middle” chocolate mug cake which takes just 45 seconds to cook.
BBC Food said: “Made in less than five minutes from start to finish, this must be the quickest, most satisfying pudding for one!
“These timings are based on an 800W microwave, you may need to adjust the timings slightly for other wattages.”

Ingredients
- 20g/1¾oz unsalted butter or dairy-free spread
- Three tbsp milk or dairy-free milk
- ¼ tsp vanilla bean paste or vanilla extract
- Two tbsp caster sugar
- Four tbsp plain flour
- ¼ tsp baking powder
- Pinch of salt
- Ice cream, cake frosting, jam or lemon curd, to serve

Method
Find a good-sized, microwaveable-safe mug to bake the cake in. Add the butter and milk to another microwaveable mug and microwave on high in 10 second increments. After each blast in the microwave, swirl the contents. Continue until the butter has melted.
Stir in the vanilla, then the sugar, flour, baking powder and salt. Beat in the dry ingredients with a fork until it has formed a fairly smooth mixture. Scoop the mixture into the clean mug.
Place the mug in the centre of the microwave and cook for one minute on high. For an 800W microwave, adjust timings for other wattages. It is ready when the sponge is firm to the touch. If it is not ready, continue microwaving in 10 second increments until it’s cooked.
Serve warm in the mug. Enjoy with ice cream, cake frosting, a dollop of jam or lemon curd. You could also serve with cream and fruit.
