Cauliflower with tomatoes & beans

    1 cauliflower, cut into florets
    100g trimmed fine green beans, halved
    1 tbsp oil
    1 onion, sliced
    1 tsp cumin seeds
    3 tomatoes, diced
    200g can butter beans, drained
    ½ x 28g pack coriander, chopped 


    1. Cook the cauliflower in boiling water for 3 minutes, add the beans and cook for a further 2 minutes, then drain.

    2. Meanwhile, heat the oil in a frying pan and fry the onion and cumin for 2-3 minutes. Add the tomatoes, 50ml water and butter beans and cook for 2 minutes. Stir into the cauliflower with the coriander, season and serve.
