Salted Carmel Chicken Wings Sauce

30 Wings worth
1 cupwhite sugar
1 teaspoonvanilla extract
1 tablespoonsoy sauce
1 tablespoonlime juice
1⁄4 cuphoisin sauce
1⁄4 cupheavy cream
kosher salt (to taste)
Add sugar, vanilla and water to a pot and boil over medium heat, stirring occasionally, until golden brown and has thickened (about 10 minutes).
Add the soy sauce, lime juice, hoisin sauce, heavy cream and let it come up to a boil again and then reduce the heat to low and let simmer for another 10 minutes.
Remove from heat and let the sauce cool.
Pour over piping hot wings and toss and then sprinkle with kosher salt.
