Breakfast Pastries (Fatayer)


  1. (A) the dough
  2. 700 g flour
  3. 2 tsp instant yeast
  4. 2 tsp salt
  5. 2 tbsp sugar
  6. 2 cup warm milk
  7. 2/3 cup olive oil
  8. (B) cheese filling
  9. 200 g feta cheese
  10. 100 g chopped fresh parsley
  11. 1 egg
  12. (C) spinach filling
  13. 3 cups fresh spinach
  14. 150 g pomegranate
  15. 2 tbsp pomegranate molasses
  16. 1 tsp salt
  17. 1 tsp sugar
  18. 1 large onion diced finely


  1. Mix all the ingredients in section A until well combined, then knead with hands for 5 minutes.

  2. Cover the dough in plastic wrap and let it rest at room temperature for 20 minutes. it should double in size.

  3. To make the cheese filling, combine all the ingredients in section B and mix until it forms a paste.

  4. To make the spinach filling, wilt the spinach in a pan with the onions, then turn off heat and add the rest of the ingredients in section C.

  5. Cut the dough into even portions and then roll them out and fill them with any of your chosen fillings. I always like to make a variety.

  6. Brush some egg whites onto the dough to give it a golden colour.

  7. Preheat oven to 200°C and bake the pastries for 10-15 minutes or until the dough is fully cooked. serve hot.
