Easy and tasty.
- 500 gr carrots, peeled and grated
- 2 eggs
- 1 tsp salt
- ground black pepper
- 4 tbsp self-rising flour (regular AP should work fine as well)
- Oil for frying (2-3 tbsp per batch)
Combine all ingredients. Mix well. Leave for five minutes or so.
If it’s too runny, add more flour. If it’s too thick, add a bit of water.
Heat oil in a pan. Scoop batter bit by bit and pan-fry until the color darkens.
