Cheesy Grilled Portobello (Keto friendly)

Not sure what else to call these other than little “pizzas” lol, but they are low carb and delicious so I’m happy! We served ours with grilled boneless skinless chicken breasts.

Ingredients

  1. 2 large portobello caps
  2. 2 tbs extra virgin olive oil
  3. 2 tsp fresh minced garlic
  4. 1/4 cup finely shredded Italian cheese blend
  5. 2 tbs finely diced fresh roma tomato
  6. to taste Salt and pepper

Steps

  1. Prepare your grill for direct grilling. Gently clean mushrooms and brush 1/2 tbs on both sides of both mushrooms. The mushrooms will absorb the oil, but that’s okay. Sprinkle both sides of each mushroom with desired amounts of salt and pepper.

  2. Close grill lid. Cook 5 minutes more or until mushrooms are tender and cheese is melted. Serve as a main dish or side! Enjoy!
