Ethiopian cookies

It’s a family friend’s recipe. Not sure why they’re called Ethiopian cookies lol… P. S. I made it for a celebration and people thought it was legit from a bakery. That’s how good it was! ?‍♀️?

  1. 6-8 oz ground almonds
  2. 8 oz melted chocolate
  3. 2 egg whites
  4. 1/2 cup confectionery sugar
  5. dough
  6. 2 sticks butter
  7. 1/2 cup confectionery sugar
  8. 2 tsp vanilla sugar
  9. 2 cups all-purpose flour

  1. Filling: Mix the almond flour, melted chocolate and egg whites (no mixer) until it turns into a grey-brown color mixture. Form small balls and freeze for 2 hours

  2. Dough: beat butter, add sugars and beat. Mix in flour.

  3. Take out the filling from the freezer. Wrap the dough around the frozen chocolate balls. Make sure they are of a consistent size. Place on cookie sheet.

  4. Bake for 10 minutes on 350°. KEEP CHECKING. It bakes easily.
