    DIRECTIONS

  • In a large mixing bowl put the eggs and beat them with a fork.
  • Add the mayonnaise and the creole seasoning mix and blend.
  • Stir in the bread crumbs.
  • Gently mix in the crab meat.
  • Taste. If more salt is needed, add more of the creole seasoning mix.
  • Make 9 or 10 patties and fry over medium heat,in oil, in batches, until golden brown on both sides. Occasionally add a little more oil if needed. You may not need it.
  • Serve at once.
