Joes' Salmon cakes


  1. 1 side salmon
  2. 2 lemons, cut in half
  3. Pinch salt
  4. 1 T old bay seasoning
  5. 1/2 C Panko (you can use almond flour)
  6. 2 scallions, chopped fine
  7. 1/4-1/2 C mayonnaise
  8. 1/2 stick butter, melted
  9. 1/4 C milk
  10. 1/4 C lemon juice
  11. 1 T Dijon mustard
  12. 2 eggs
  13. 1 tsp salt
  14. 1 tsp white pepper
  15. Fresh thyme
  16. 2 T olive oil


  1. Preheat oven to 350°.

  2. In a large pot of water add 1T salt, the juice of 2 lemons, the lemons and 1T old bay; bring to a boil and then turn down to simmer. Add the salmon and poach for 10 minutes. Take out of the water and cool, then remove from the skin and shred.

  3. In a large bowl, combine the salmon and all other ingredients except olive oil. Mix into a paste-like mixture. Form into patties.

  4. Heat the oil in a skillet on medium. Brown both sides of patties and then put into the oven for 5-10 minutes. Delicious!
