Keto GF Lemon Bars

Ingredients

  1. Crust
  2. 2 sticks butter (softened)
  3. 2 cups coconut flour
  4. Zest from 6-8 lemons
  5. 1 tsp vanilla extract
  6. 1/3 cup Stevia sweetener
  7. 1 egg (2 if you want the crust less crumbly)
  8. 1/4 tsp salt
  9. Topping
  10. 1 1/4 cup Stevia
  11. The pulp and juice of all lemons (2 cups+)
  12. 1 tsp baking soda
  13. 8 eggs
  14. 3 scoops beef gelatin (optional)
  15. 1/2 cup coconut flour
  16. 1 tsp per dish powdered Stevia for topping

Steps

  1. Mix all crust ingredients and press into bottom of 2 greased baking dishes. Cook at 315 for 25min.

  2. Mix all topping ingredients and pour on top of baked crust. Bake on 350 for 25min. When you pull the lemon bars out, then sprinkle powdered stevia and place lemon bars in the fridge to cool.
