Lemon Blueberry Crumble
- 1 box lemon ? cake mix
- 1 1/2 pounds fresh blueberries
- 1 lemon, zested and squeezed
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 1/3 cup margarine, melted
- Sprinkle cinnamon powder
- Butter cooking spray
In a bowl mix your freshly rinsed blueberries with the zested lemon, lemon juice, white sugar and vanilla extract…..When you zest your lemon make sure you stop at the white of the lemon, DO NOT ZEST THE WHITE PART OF YOUR LEMON, you only want the yellow part (that’s where all the good flavor is at !!!)……
Mix all very well and set to the side…..
Next spray a 9X13 inch glass baking pan with butter cooking spray……
Take your lemon ? cake mix and pour dry cake mix into your greased baking pan, making sure dry cake mix is evenly spread out…..
Now place your blueberry mixture over dry cake mix…..Cover as much of the dry cake mix as possible with your blueberry mixture…..
Sprinkle blueberries with your cinnamon powder……
Next drizzle your melted margarine over all…….
Bake in a preheated 350 degree oven for 30 minutes….
Let sit for about 30 minutes then serve with ice cream or by itself and enjoy ?!!!!
