Mediterranean quiche
Emily Reiter’s quiche recipe was the inspiration for this dish. I took her recipe and added some Greek flare to it. It came out perfect!
Ingredients
- 1 pie crust
- 5 eggs
- 1/3 basil pesto
- 1/2 c spinach
- 6 cherry tomatoes (quartered)
- 1/2 c heavy cream
- 6 kalamata olives (halved)
- 1/3 cup feta cheese
- 2 tbs goat cheese
- 1/2 cup mozzarella cheese
- 1 tbs grated parmesan
- 1/2 tsp salt
- 1/2 tsp pepper
Steps
Preheat oven to 400 degrees and prebake/blind bake pie crust for 13 minutes with crust shielded.
While crust is baking, prepare the filling. Beat eggs, salt, pepper and heavy cream well.
Fold in tomatoes, olives, mozzarella and feta.
Add filling to pie crust, drop bits of goat cheese on top and lightly pat down. Top with parmesan and bake for 25 minutes. Remove shield and bake for 5 more minutes.
