Mexican turkey and chips

This is a recipe my husband and I made together when we were first married and we’ll keep on making it.


  1. 1 lb ground turkey
  2. 2 cups white instant rice
  3. 1 jalapeño chopped
  4. 3 Roma tomatoes
  5. 1/4 cup chopped cilantro
  6. 1 lime
  7. 1 can black beans
  8. 1 can corn or frozen
  9. Tortilla chips
  10. Guacamole optional
  11. Cumin


  1. On medium high heat, cook ground turkey. Drain excess liquid. Season with salt, pepper, and cumin.

  2. While turkey is cooking, cook white rice per instructions.

  3. After turkey is cooked, add chopped Roma tomatoes, jalapeños, corn, drained black beans, cilantro, cooked rice, and juice of lime.

  4. Let it cook on low for 5-10 minutes.

  5. Serve with chips and other toppings like cheese, guacamole
