Seafood Chowder

One of my clients made this for me and wouldn’t share the recipe. This was all based off taste and I have to say it is pretty comparable. I hope you like this as much as I do.

Ingredients

  1. 8 bacon slices
  2. 8 green onions minced – reserve green part and set aside
  3. 2 Tbs thyme
  4. 2 whole garlic's minced
  5. 4 Tbs flour
  6. 5 cups milk (I used nonfat)
  7. 2 1/2 cups chicken stock
  8. 2 bay leaves
  9. 2 lbs raw shrimp in shell
  10. 4 lobster tails
  11. 1 tsp salt
  12. 1 tsp pepper
  13. 1/2 tsp red pepper flakes (I used 2 tsp because I like it spicy)
  14. 24 oz frozen corn
  15. 2 cans crab meat (I used Blue Star)

Steps

  1. In a stock pot, cook bacon. Remove bacon when finished and set aside.

  2. Sauteed green onion, thyme and garlic in bacon reserves for about 3-5 minutes.

  3. Stir in flour, milk chicken stock and bay leaves. Continue stirring for about 1 minute.

  4. On medium low heat, add shrimp and lobster tails. Cook for about 15 minutes or until shrimp is done. Try not to overcook the seafood.

  5. Remove shrimp and lobster tails when cooked and turn stovetop to low.

  6. Remove shrimp and lobster from shells. Chop lobster into pieces then add both back to pot.

  7. Add salt, pepper, pepper flakes, crab meat and corn. Cook for another 5 minutes on medium low then add bacon bits and the green part of onions.

  8. You can adjust the seasonings to your taste and add more flour for thickness.
