Sugar-Free Gluten-Free Banana Muffins

INGREDIENTS

  • 3bananas (very ripe, mashed)
  • 3eggs (or Egg Beaters for lower fat or calories)
  • 2cupsalmond flour
  • 1cup multi-purpose protein powder (plain)
  • 1teaspoonvanilla
  • 1teaspoonbaking soda
  • 12 teaspoonbaking powder
  • 14 teaspoonsalt
  • 12 teaspoonxanthan gum
  • 1 -2teaspoonground cinnamon
  • 2tablespoons sugarfree vanilla syrup (Torani)
  • 14 cup sugarfree chocolate chips
  • DIRECTIONS

  • Mix all ingredients, except chocolate chips, with beaters until well mixed. Batter will be THICK, but shouldn’t be dry.
  • Stir in chocolate chips.
  • Scoop into regular muffin tin, lined with muffin wrappers or into greased mini loaf pans.
  • Bake at 350 for 18-20 minutes (check with a toothpick for doneness).
