Sugar-Free Gluten-Free Banana Muffins

INGREDIENTS 3bananas (very ripe, mashed) 3eggs (or Egg Beaters for lower fat or calories) 2cupsalmond flour 1cup multi-purpose protein powder (plain) 1teaspoonvanilla 1teaspoonbaking soda 1⁄2 teaspoonbaking powder 1⁄4 teaspoonsalt 1⁄2 teaspoonxanthan gum 1 -2teaspoonground cinnamon 2tablespoons sugarfree vanilla syrup (Torani) 1⁄4 cup sugarfree chocolate chips
DIRECTIONSMix all ingredients, except chocolate chips, with beaters until well mixed. Batter will be THICK, but shouldn’t be dry.Stir in chocolate chips.Scoop into regular muffin tin, lined with muffin wrappers or into greased mini loaf pans.Bake at 350 for 18-20 minutes (check with a toothpick for doneness).
