Summer Soup Batch 5

Delicious soup a bit hearty, but for a day working in the yard it was perfect. I paired this up for a soup and salad day with German Potato Salad Batch 2.

Ingredients

  1. Soup ingredients
  2. 1/2 pound ditalini pasta
  3. 1/2 cup dry mild salami
  4. 1 pound bacon
  5. 15 ounces canned black beans
  6. 1 large onion
  7. 48 ounces chicken broth
  8. 2 large carrots
  9. 3 stalks celery
  10. 1 pound ground sirloin
  11. Seasonings
  12. 1 teaspoon salt
  13. 1/2 teaspoon ground black pepper
  14. 1 teaspoon granulated garlic
  15. 1 teaspoon ground paprika
  16. 1 tablespoon parsley flakes
  17. 1/2 teaspoon thyme
  18. 1/2 teaspoon herbs de Provence
  19. Cheese
  20. 1/2 cup crumbled swiss cheese

Steps

  1. Chop all the vegetables. Slice the salami on a bias

  2. Fry the bacon when partially rendered, add the black pepper fry, add the salami, and fry till crispy.

  3. Add the vegetables and ground sirloin to the bacon drippings. Sauté the vegetables till tender. Sauté the Sirlion till browned. Season the vegetables and sirlion with the seasonings.

  4. Add the beans, pasta, and broth.

  5. Cook till pasta is to your desired doneness. Top with swiss cheese and serve. I hope you enjoy!!
