Telur Ceplok Masak Kecap (Sunny Side Up Eggs with Sweet Soy Sauce)
Sweet soya sauce is one of the essential ingredients in Indonesian cuisine. It’s made of soy beans and it has dark color just like soy sauce, but it’s sweet and thicker due to the generous addition of palm sugar. A lot of indonesian’s recipes use this sweetened aromatic soy sauce. ? Please follow my Instagram @jenscookingdiary if you like my recipes ??
- 6 sunny side up eggs
- 2 Tbsp vegetable oil
- 3 cloves garlic, minced
- 5 cloves shallots, thinly sliced
- 3 red chili peppers, diagonally sliced
- 3 green chili peppers, diagonally sliced
- 3 bird eye chilli peppers (optional)
- 2 medium tomatoes, wedged
- 2 green onions, thinly sliced
- 1,5 Tbsp oyster sauce
- 5 Tbsp sweet soy sauce
- 1/2 sdt salt or to taste
- 1/4 sdt white pepper powder or to taste
- 150 ml water
Heat the vegetable oil over medium high heat. Sauté garlic and shallots until fragrant.
Add red and green chili peppers, and bird eye chili peppers (if you use some).
Season with oyster sauce, sweet soya sauce, salt and white pepper powder. Add water. Cook until boiling.
Add tomato wedges. Mix well.
Add sunny side up eggs. Slowly stir so that you will not break the egg yolks.
Add sliced green onions. Remove from the heat.
Serve with warm white rice! Yum! ?
