Tim's Mom's Salsa

Ingredients

  1. 15 tomatoes
  2. 1 bunch celery
  3. 6 large onions
  4. 8 red peppers
  5. 8 green peppers
  6. 3 hot peppers (optional)
  7. 12 oz white vinegar
  8. 1 1/2 tablespoons salt
  9. 2 cups sugar
  10. 1/2 tablespoon cinnamon
  11. 1/2 tablespoon all spice
  12. 1/2 tablespoon cloves
  13. 1/2 cup ketchup

Steps

  1. Scald tomatoes in boiling water and peel

  2. Chop tomatoes into bite size pieces and cook in large pot until heated through

  3. Add celery and cook for 30 min

  4. Add remaining ingredients except ketchup and cook for 1.5 hours, stirring occasionally

  5. Add ketchup and cook for an additional 30 min

  6. Pour into sterilized hot mason jars and seal
