Tomato Eggs

A favourite dish that my dad loves to order whenever he finds himself at the Chinese economic rice stalls. He enjoys eating healthy and this is by his standards not only healthy but colourful and satisfying as well. Let’s just say the bulk of his list is rather plain and green compared to this 🙂


  1. 4 eggs
  2. 2 big tomatoes
  3. 1/4 clove garlic
  4. 1 tablespoon oil
  5. Pinch salt
  6. 1 tablespoon sugar
  7. Pepper


  1. Cut the tomatoes into medium sized cubes. Crack eggs into bowl. Beat well. Chop garlic. Add garlic and fry with oil for 10 seconds. Start cooking the tomatoes until slightly soft. Stir in eggs. Cook till desired done-ness of egg textured.
