Wild blueberry flax muffins

I made these for my mom because she is eating Keto. She loved them! Her only concern was that they were a little sweet. I fixed that the second time I made them by adding less stevia


  1. 1 cup almond flour
  2. 1/2 cup organic flax meal
  3. 1 cup wild blueberries
  4. Pinch salt
  5. Pinch stevia (or other sweetener)
  6. (do not use sugar or splenda!)
  7. 1/4 cup unsweetened almond milk
  8. 2 teaspoons cold water
  9. 1 egg


  1. Sift together, flax meal and flour. Set aside in a large bowl

  2. Whisk almond milk and egg until well blended

  3. Add salt and stevia to egg mixture and stir

  4. Add water to egg mixture

  5. Add the egg mixture to the flour mixture

  6. Stir until well combined

  7. Add blueberries

  8. Bake at 350 degrees for 12-30 minutes

  9. Enjoy!
